I was dug in, addicted, scoffed at any coffee brand other than the one that shall, in this blog post, go unnamed. Then came the day that a shipment of Chameleon Cold-Brew Organic Coffee arrived on my doorstep. I never refuse tasting coffee, especially premium coffee. (I admit I am a coffee snob.) But I never liked any enough to switch my brand, much less finish the cup.
I thought the assortment of Chameleon flavors looked interesting, and very appealing indeed. I lined them up enticingly in the fridge, and asked my family to sample them. No takers.

rian poplette. Crusty on the outside and creamy on the inside, they are delectable little bites of flavor: garlic, mint and basil, cheese and eggplant. In no more time than it takes to make traditional MEATballs, you can assemble these. The recipe comes to me compliments of Anna Maria Chirone Arno, but I have been able to adapt it for a two person serving by using one large eggplant and one egg, 3/4 cup of cheese. Go hefty on the dried spices. Serve with a plate of orecchiette and you will swear you were in Puglia. Well, wishful thinking anyway. Buon appetito!
Whether for your child or yourself, maintaining a restrictive diet while on vacation can be a trick, especially one that’s gluten-free. Recently I was presented with this challenge – not only gluten-free, but a vegetarian and low-residue (no roughage or anything raw) diet as well – while traveling out of the country. While not suffering from Celiac specifically, it was still important to my intestinal health that I maintained this strict regimen. Of course, I found it a real test. However, there were some foods that saved me, and lessons I learned on the fly that I will be sure to rely upon as I continue to travel while I am on this eating regimen. My hope is that these suggestions help others as well!
